A Collaboration of Grape Witches and Paradise Grapevine.

Processed separately, half of the riesling and all of the vidal were pressed directly and partially went through malolactic fermentation on fine lees, while the other half of the riesling was cold crashed (a process of chilling fermented wine to near-freezing temperatures to preserve aromatics!), and the muscat ottonel was cold-soaked on skins overnight, then went through full malolactic fermentation for texture and aromatics.

White blend of 80% Riesling, 10% Muscat Ottonel and 10% Vidal all from the Niagara Peninsula, made by Paradise Grapevine in Toronto. It features aromatic notes of petrol, apple blossoms, tart pear jus, green mango and lime sherbet, with a smooth marshmallow texture and mineral finish.
