Made by Paradise Grapevine at Geary Avenue, Toronto. A 100% Sauvignon Blanc.

The Sauvignon Blanc was harvested on October 4th, 2023 from the Reuther Vineyard in NOL. The fruit was de-stemmed and pressed immediately, then settled in stainless steel. Following racking, it underwent a free-rise fermentation in the cool cellar. Once alcoholic fermentation was complete, the wine was transferred with its light, fluffy lees into neutral French oak, where it rested untouched for 22 months. It was naturally fermented with minimal sulphur additions.

Brings notes of lemon merengue pie, white flowers, salt and late-summer grass.
